"Drowned" - this time not a word from a criminal chronicle, but the popular name of a completely harmless yeast dough, which rarely fails the housewives. Prepare it according to the recipe and your pastries will always turn out fluffy and soft.

Ingredients and preparation of the drowned yeast dough

You will need:

- 750 g of premium wheat flour;

- 3 medium sized chicken eggs;

- 200 ml of 2.5% milk;

- 150 g butter or quality margarine;

- 10 g of dry active yeast;

- 2 tbsp. white sugar;

- 1 tsp fine salt.

Remove butter or margarine, eggs and milk from the refrigerator 30-40 minutes before cooking to warm food to room temperature. This is an important point in the recipe, do not neglect it. Sift the flour twice through a fine sieve for extra fluffiness.

Pour milk into a saucepan and heat on the stove to 40-50oC or microwave. Dissolve the yeast in it and dissolve the sugar, which further activates its action. Mix everything well with three tablespoons of flour and place in a warm place in the kitchen or in an oven preheated to 30oC for 15-20 minutes until a "full of holes" foam appears.

Crack the eggs into a deep bowl or bowl, add salt and whisk. Grate butter or margarine on a fine grater or mash with a fork and add to the egg mixture, pour in the yeast liquid, add 2 tbsp. flour and stir everything thoroughly.

Knead the dough, gradually adding the remaining flour, first with a wooden spoon, then with your hands. Transfer it to a table powdered with flour and knead for 5-10 minutes, it should turn out to be soft, but at the same time elastic and not stick to your palms.

Drowning the dough

You will need:

- a large saucepan or bucket;

- 3 liters of cold water;

- a piece of gauze measuring 50x70 cm.

Fill a saucepan or bucket with very cold, clean water. Spread a piece of gauze over the dishes and gently dip a lump of dough into it for 15-30 minutes. At first, it will sink to the bottom, but then it will begin to float up, increasing in size. The process of raising the yeast dough using this method is much faster than the traditional one, since carbon dioxide from the yeast cannot escape into the air due to being surrounded by water, but remains inside.

Pull the dough out of the water carefully, gathering the edges of the fabric. Squeeze out the gauze and discard, blot the Drowned Man with a paper towel, cover with a damp towel and leave in a warm place for another 15 minutes. Wrap your hands around it again and bake pies, tarts, rolls, pizza or other pastries of your choice. Let the items sit on the baking sheet for 15 minutes before placing them in the oven.
