Step 1
Grate the carcass of a freshly plucked goose with flour and burn with a gas burner. Then remove all insides and rinse the bird well inside and out. The goose bought in the store is already scorched and gutted. It is only necessary to thoroughly wash it and remove the feather stumps, possibly remaining after processing. Cut off excess fat from the goose.
Step 2
Rub the prepared carcass inside and out with salt. Place it upside down in a skillet or baking sheet. If the legs of the goose are very wide apart, tighten them slightly with a thread.

Pour 1 glass of hot water over the goose and place in the oven preheated to 180 degrees. There should be enough free space between the poultry carcass and the walls of the oven. The goose must not touch the heating elements.
Step 4
Multiply 45 minutes by the weight of the goose to get the approximate cooking time. So, a goose weighing 4 kg will cook (45 * 4) 180 minutes, that is, 3 hours. Turn the poultry periodically during frying. Water the goose with the secreted juice and fat, this will make it more juicy.
Step 5
The goose will be ready if the knife sticks easily into the meat and light juice flows from it. In this case, the meat is easily separated from the bones.

Put the finished carcass on a wide plate.

Put the frying pan with the fat melted during frying the goose on the fire. Add 1 cup of meat broth there and boil.
Step 8
When serving, cut the poultry into portions, place on a platter and pour over the meat broth. Cook fried potatoes for a side dish. Sprinkle everything with finely chopped herbs and serve.
