Canned zucchini for the winter is one of the most popular vegetable preparations. Most often, a variety of salads are made from zucchini. In addition, zucchini is salted, pickled, caviar and even jam are prepared from them.

Canned Zucchini and Carrot Salad Recipe

You will need the following products: 3 kg of zucchini, 1 kg of carrots, a bunch of fresh parsley, 1 head of garlic, 500 ml of water, 3. tbsp. tablespoons of vegetable oil, 2 tbsp. spoons of 9% vinegar, 3 tbsp. tablespoons of sugar, 3 tbsp. tablespoons of salt, 500 ml of water, black pepper to taste.

Wash the vegetables. Peel the carrots and rub on a coarse grater. Cut the courgettes into medium-sized cubes. Wash and dry the parsley, chop finely. Peel the garlic and pass through a press.

Make a marinade. To do this, boil water, dissolve sugar, salt and acetic acid in it, add vegetable oil, stir. Put vegetables, herbs and garlic in the marinade, boil for 10 minutes.

Divide the salad into sterile jars and roll up the lids.

Pickled zucchini recipe with herbs

You will need the following products: 2 kg of courgettes, 0.5 kg of onions, 1 head of garlic, a bunch of fresh parsley, 3 tbsp. tablespoons of vegetable oil, 2 tbsp. spoons of 9% vinegar, 1 tbsp. spoon of sugar, 2 tbsp. tablespoons of salt, 150 ml of boiled water.

Wash the zucchini and cut them into 1 cm thick slices. Boil the zucchini in water for 2-3 minutes, remove and cool.

Peel the garlic, pass through a press. Combine garlic with sugar, salt, black pepper, grind the mixture and cover with chilled boiled water. Add acetic acid and vegetable oil to the marinade, mix.

Wash and dry the parsley, chop finely. Peel the onion, cut it into small cubes. Stir the zucchini with herbs and onions, cover with marinade and put under oppression in a cool place for 12 hours.

Arrange the salad in quart jars. Take a wide and deep saucepan, place a towel on the bottom of it and place the salad jars on the towel. Cover the jars with lids, but do not roll them up. Pour water into the pot until it reaches the hangers of the cans. The water should be at room temperature. Place the pot on the stove, wait for the water to boil, reduce heat, and sterilize the jars for 30 minutes. Roll up the cans with lids.

Zucchini caviar recipe

You will need the following products: 1 kg of courgettes, 2 medium carrots, 2 large onions, 100 g of tomato paste, 2 tbsp. tablespoons of vegetable oil, salt and black pepper to taste.

Wash the vegetables. Cut the courgettes into medium-sized cubes. Fry the zucchini in vegetable oil until golden brown. Peel the carrots and onions. Grate the carrots on a medium grater, finely chop the onion. Fry onions and carrots in vegetable oil for 5 minutes, add tomato paste to them, stir and fry for another 2-3 minutes.

Transfer the courgettes and onions with carrots to a blender bowl, add salt and black pepper to taste, and twist the caviar. Divide the squash roe into the jars. Sterilize the jars in a saucepan as described in the previous recipe.

Zucchini jam recipe

You will need the following products: 1 kg of courgettes, 3 large oranges, 1 kg of sugar.

Wash the courgettes, peel them and cut into small cubes. Wash the oranges, cut them into half rings along with the peel, remove the seeds. Place the zucchini with oranges in a saucepan and top with the sugar to release the juice. After 5 hours, stir everything, put on fire, bring to a boil and simmer over low heat, stirring constantly, for 20 minutes. Remove the jam from the heat and let it sit for 5 hours. Then bring the jam to a boil again, boil it for 15 minutes and let it sit again for 5 hours. Boil the jam one last time and simmer for 15 minutes. Pour the jam into sterile jars and roll up the lids.
