No wonder it is mushrooms that replace meat, because they are nutritious, tasty and low-calorie.

Step 1
Cooking raw mushrooms should begin with thorough cleaning. Remove the mycelium and the lower (hard) part of the stem and wash them. Then put in salted water and bring to a boil. Then drain and refill with new water. Cook the mushrooms for at least an hour, especially if they are large. When foam appears on the surface, remove it. Be sure to drain the water after cooking.
Step 2
Salted mushrooms do not need to be boiled before pickling. Just rinse them thoroughly, removing the seasonings and onions. Dried semi-finished products are not recommended to marinate, because they will turn out to be too soft and not very tasty.
Step 3
Place food in a saucepan and fill with a liter of water. It should cover the mushrooms by 3-5 centimeters. Add 3 teaspoons of vinegar essence (70%) or 3-4 tablespoons of vinegar to the water. If you want to get an original taste, you can replace it with apple or wine. Let the mushrooms simmer.
Step 4
Add two tablespoons of sugar and stir well to dissolve. If you want to make mushrooms more pungent and spicy, then just add one spoonful of sugar. A sweetener can be used if desired. You will need about 6 tablets. The dish will turn out to be less high-calorie.
Step 5
If you used salted mushrooms, add two teaspoons of salt. And if fresh, then four. For those who are used to eating unsalted food, the amount of this seasoning can be cut in half.
Step 6
Then add 3-4 large bay leaves, 3-4 cloves, 6 black peas and 4 allspice. If you are a fan of spicy and spicy, then increase the amount of seasonings by 50%. Try the broth, it should be spicy and a little sweet.
Step 7
After boiling, cook the mushrooms for at least 20 minutes. Then immediately put them to cool in a cool place. This pickling option is good because the mushrooms will be ready a couple of hours after you have removed them from the stove. Store them in the refrigerator with a tightly closed lid. The shelf life can be up to several months.
