In order to make homemade eclairs with custard, you will need: 140 g + 2 tbsp. l. flour, 100 g butter, 300 ml water, 4 eggs, 300 ml milk, 3 egg yolks, 50 g sugar, 2 tbsp. l. starch, 1 tsp. vanillin, 100 g dark chocolate, 2 tbsp. l. cream.

Cooking homemade eclairs

Take a deep bowl, put butter in it and pour in the required amount of water, then put on medium heat and bring to a boil. Reduce heat, add flour very carefully to the boiling mass. Stir the dough until it looks like a soft ball. Remove from heat and let cool for 5 minutes.

Add eggs to the cooled dough, beat everything with a mixer. The dough for homemade eclairs is ready, transfer it to a pastry bag. Take a baking sheet and line it with parchment paper, squeeze the dough onto the paper (8-10 oblong portions). Send the future eclairs to the oven, preheated to 180 degrees, bake for 25-30 minutes.

At this time, prepare the brownie custard. Beat the egg yolks with granulated sugar until thick, then add two tablespoons of starch and the same amount of flour. In a separate bowl, bring the milk to a boil, then add it to the rest of the ingredients. The milk must be poured very slowly and gently. Leave the cream to cool.

Prepare the icing by melting the chocolate in the cream and stirring well until smooth. Fill the homemade eclairs with cream, and pour the top of the cakes with chocolate icing.
