All vegetables are washed and cleaned. Zucchini, potatoes, peppers and onions are cut into cubes or in another convenient way. Grate carrots and garlic on a fine grater. Put the ingredients in a saucepan, mix, leave to simmer over low heat for 30 minutes. Add tomato, salt, dill and continue to simmer for 5-7 minutes.

Would need:
- Two chicken eggs;
- 30 grams of hard cheese;
- 100 ml of milk;
- dry garlic and salt to taste;
- half of one young zucchini.
Grate the zucchini on a fine grater. Milk, eggs, salt and garlic are mixed separately. The resulting mixture and grated cheese are added to the zucchini. Fry under a closed lid, 5-7 minutes over medium heat.
Zucchini pancakes
The pancakes are perfect for breakfast or a snack.
Dough:
- One zucchini;
- medium-sized chicken egg;
- salt, dry garlic and pepper to taste;
- 50 grams of grated cheese, optional;
- 30 grams of rice or wheat flour;
Sauce:
- 2-3 tbsp sour cream or soft cheese;
- salt and dry garlic.
Grate the zucchini on a fine grater, squeeze out the water, add the egg, flour, spices and mix well with a fork. Shredded cheese is added. Pour the dough into a preheated pan with a spoon and fry on each side for 2-3 minutes, until golden brown.
Sour cream and spices are mixed in a separate container. Served with ready-made pancakes.
Soup
Squash puree soup turns out to be light and satisfying.
You will need:
- Two medium-sized young zucchini;
- 200 ml of water, chicken or vegetable broth;
- onion head;
- salt and pepper to taste;
- 100-120 grams of processed cheese;
- dry garlic or one clove;
- croutons or croutons;
- fresh dill.
The courgette is peeled and cut into cubes. Transfer to a saucepan, add onion, garlic, salt and spices fried until golden brown. Pour in broth, bring to a boil and cook for 15-20 minutes, over low heat. Add cheese, mix well and remove the pan from heat. Grind with a blender. Bring to a boil and turn off the stove.
