The vinaigrette taste is strongly associated with a vegetable oil dressing. However, there are many options to make this traditional vegetable salad more interesting and original. You can season the vinaigrette with mustard sauce, tomato paste, vinegar and other rather unusual combinations of ingredients.
Any homemade sauce must be thoroughly chilled before adding to the salad. The vinaigrette dressing should be infused for at least 15 minutes so that all its components are well combined. This condition is especially true if the sauce contains a large number of different spices.
Classic dressing for mustard vinaigrette
Ingredients:
- 1, 5 Art. l. natural apple cider vinegar;
- 2 pinches of coarse salt;
- a pinch of ground black pepper;
- 5 tbsp. l. sunflower oil;
- 1/2 tsp sweet common mustard.
Step by step cooking
Pour sunflower oil into a blender bowl, add salt and sweet mustard. Stir until the products are dissolved. Add apple cider vinegar to the mixture.
It is important to put a natural product in the dressing, and not simple table vinegar with a fruit flavor. Add salt and pepper at the end. Whisk the dressing ingredients with a blender until smooth.
This common dressing recipe is perfect for any vinaigrette recipe.
Garlic vinaigrette dressing
Ingredients:
- 2 cloves of garlic;
- 5 tbsp. l. olive oil;
- 3 tbsp. l. red wine vinegar;
- a pinch of fine salt and a mixture of different ground peppers.
Combine olive oil and wine vinegar in one bowl by hand or using a blender attachment. Add salt to taste and a mixture of colored ground peppers to the base.
Top with crushed garlic without a core. Refrigerate the dressing and use for the vinaigrette.
Original dressing for vinaigrette with tomato paste
Ingredients:
- 3 dec. l. vegetable oil (preferably olive);
- 3 dec. l. thick tomato paste;
- 4 dec. l. boiled water;
- 1, 5 dec. l. mild mustard;
- salt and sugar to taste.
Pour vegetable oil and tomato paste into a blender bowl. Whisk everything until smooth. This mass will form the basis of the filling.
Add mild mustard, boiled water to it and mix everything again until smooth. Salt the dressing and add sugar to taste, this interesting combination will make the dressing memorable.
This sauce goes well with vinaigrette, which contains pickled cucumbers and lacks sauerkraut.
Dressing for vinaigrette a la "Pesto"
Ingredients:
- 50 g finely grated Parmesan;
- 1 bunch light basil
- 2-3 cloves of garlic;
- 1 handful of peeled pine nuts
- 2/3 st. olive oil.
Rinse and dry basil leaves. Mix the herbs in a blender with the garlic, chop. Pour the resulting mixture with olive oil.
Pour chopped parmesan into the sauce and mix well. Pine nuts are added to the dressing last, mix everything with them again with a blender. Chill the sauce before adding to the salad.
Dressing with sour cream and vinegar
Ingredients:
- 1/4 tbsp. mild mustard;
- 1/4 tbsp. low-fat sour cream;
- 1/4 tbsp. natural apple cider vinegar;
- 1 tsp icing sugar;
- fine salt to taste.
Pour apple cider vinegar into a bowl to sour cream and add mild mustard. Mix the ingredients well. Add icing sugar and salt to the dressing to taste. Let the mixture sit in the refrigerator for at least 10 minutes.
This vinaigrette dressing with vinegar and mustard can be combined with any salad option. If you wish, you can also add various chopped nuts to it: pine or walnuts.
Lazerson's Vinaigrette Dressing Recipe
Ingredients:
- 4 dessert spoons of olive oil;
- 1 teaspoon hot mustard
- 1 dessert spoon of wine vinegar;
- 1/4 teaspoon salt
- 1 teaspoon lime or lemon juice
- 1/4 teaspoon sugar
- 1/4 teaspoon ground black pepper
Pour wine vinegar and olive oil into a glass container. Stir the ingredients and add sugar, salt and pepper to them.
When the spice grains dissolve in the dressing, add mustard to them. After stirring again, pour lemon or lime juice into the sauce.
This vinaigrette dressing option should be sour. Therefore, the juice of any citrus fruit becomes an indispensable component here.
Vinaigrette dressing with balsamic vinegar
Ingredients:
- 3/4 Art. corn oil;
- 3/4 teaspoon salt
- 2 boiled egg yolks;
- 1/4 tbsp. lime or lemon juice;
- 1 teaspoon balsamic vinegar
- a pinch of black pepper.
This delicious vinaigrette dressing is quick and easy to make. First you need to grind the boiled yolks with a fork, then add salt and ground black pepper to them.
Mix the corn oil with the balsamic vinegar and pour the mixture in a thin stream into the dressing base. Mash all ingredients thoroughly and add lemon juice.
Beat the mixture until it becomes a delicate creamy consistency.
French vinaigrette dressing
Ingredients:
- 1, 5 dec. l. dijon mustard;
- 1/2 lime;
- salt to taste;
- 30 ml olive oil;
- 1 tsp icing sugar;
- 100 ml of sunflower oil.
Squeeze the Dijon mustard into a bowl. Squeeze the juice out of the lime and pour it over the mustard, rub everything well.
Add powdered sugar to the dressing, salt to taste. Mix both types of oil and refrigerate. Pour the resulting oil mixture into the sauce and mix all ingredients thoroughly.
It is recommended to use this sauce immediately for dressing the vinaigrette. By the way, it is also suitable for salads with green beans.
