Step 1
First, rinse the eggplants and zucchini well, then chop coarsely. Finely chop the bell peppers.
Step 2
Peel the tomato skins. Place in a blender and chop to make a puree.

Chop the onion finely and fry in vegetable oil until golden brown. Add zucchini, mix everything.
Step 4
Place in an oven preheated to 180 degrees for 5-10 minutes. Then add the eggplant and put it back in the oven. After 5-10 minutes, add the pepper, stir and put in the oven for another 5-7 minutes.
Step 5
Add minced meat to vegetables and mix everything thoroughly. After 5 minutes, pour the tomatoes, salt and pepper to taste.
Step 6
Add parsley, mix everything well. Bring vegetables and minced meat until tender, about 35-40 minutes. Serve with rice.
