Scordalia is a Greek potato and garlic appetizer. You can use this appetizer with black bread or vegetables.

  • - garlic 5-7 teeth;
  • - potatoes 500 g;
  • - onion 1 pc.;
  • - carrots 1 pc.;
  • - celery 1 stalk;
  • - juice from 1 lemon;
  • - vegetable oil 180 ml;
  • - olive oil;
  • - parsley;
  • - peppercorns and ground, salt.

Instructions

Step 1

Wash, peel and dice the potatoes, onions, celery and carrots.

Step 2

Pour water into a saucepan. Add carrots, peppers, parsley and onions. Bring to a boil and cook for 15 minutes. Add celery and potatoes, cook for another 20-25 minutes. Then use the rattle to transfer the potatoes to a bowl (no other vegetables are needed).

Step 3

Peel, chop and rub the garlic with salt. Mash half of the potatoes in mashed potatoes and mix with garlic. Mash the remaining potatoes with vegetable oil. Combine with garlic puree, salt and pepper, pour a little olive oil and lemon juice on top. Spread on a piece of brown bread and garnish with herbs.
