Chacha is a kind of alcoholic drink made from grapes and other fruits and berries in the North Caucasus. The alcohol content in it sometimes reaches as much as 70 degrees. Chacha is a favorite strong drink of the mountaineers, which is not abused, and usually only a glass is drunk - in cold weather or to prevent colds. It is not for nothing that chacha is considered a drink of longevity. Try making it at home and treat the guests who suddenly arrived with a homemade aperitif.

Step 1
Chacha is best prepared from berries, or rather, grape cake, which remained after making wine at home. To do this, 10 liters of the remaining grape pomace must be put into a barrel or large glass bottle.
Step 2
Next, you should add 5 kilograms of granulated sugar, 100 g of yeast there and pour everything in pre-boiled and cooled water - 30 liters. Then - close the lid and put in a dark place for 1-2 weeks, stirring occasionally, about once every two days.

Next, you need to lay the straw at the bottom of the moonshine still so that the cake does not burn. All liquid should be poured into the device along with the cake and distilled. But such chacha will have a rather specific smell that few people may like.
Step 4
Therefore, many distill chacha, having previously separated the liquid fraction from the cake, due to such distillation, a specific smell will not be present in this strong drink.
Step 5
Next, the resulting chacha must be drained into a bottle and a small amount of walnut membranes must be added, infused for 1-2 months. After that, distill again through the moonshine still and bottle. You will get chacha with a strength of about 46 degrees.
