Drying is one of the traditional ways to preserve mushrooms for the winter. Tubular mushrooms are usually recommended to dry, among which porcini or boletus is preferred. Unlike boletus and boletus boletus, this aromatic mushroom does not lose its light color even when dried.

Cut the mushrooms together with the legs into plates no more than a centimeter or one and a half centimeters thick. Sometimes it is recommended to remove the very bottom part of the leg before cutting. If you come across medium-sized boletus up to five centimeters in height, dry them whole.

Examine the mushrooms during the slicing process. It often turns out that a boletus with a clean leg has a wormy cap. In this case, dry only the leg.

Step 4

Boletus, even with a small amount of mushroom worms, are not suitable for drying, but they can still be put into action, having previously stood in salt water for half an hour. These mushrooms can be fried or made into a soup.

Step 5

If the weather is dry, sunny, the mushrooms can be dried outdoors. To do this, string the prepared boletus on a thick thread or fishing line and hang it in a well-lit place, covering it with gauze from insects. At night, such mushrooms will have to be removed into the house. The entire drying process can take about a week.

Step 6

Mushrooms, like fruits, can be dried in the oven. Lay thick paper on a baking sheet and place on it in a loose layer clean wooden sticks with a diameter of about a centimeter, pinned from dry wood without resin. Place the chopped mushrooms in one layer on top of the chopsticks.

Step 7

It is best to dry in two steps. Place a baking sheet with mushrooms in an oven preheated to fifty degrees. The oven door must be ajar. After three hours of this treatment, remove the baking sheet and let the mushrooms cool.

Step 8

The second stage of drying is carried out at a temperature not exceeding seventy degrees with the oven door open.

Step 9

If you dried mushrooms outside, but the weather turned bad, dry them in an oven preheated to fifty degrees.

Step 10

A well-dried mushroom can be broken without effort, it should be light and slightly bend, but not crumble. Mushrooms should be stored in glass jars with lids. You can keep mushrooms in bags in a cool and dry place.
