Step 1

Go through the crop to be dried. It is better to select mushrooms young, without wormholes and other damage. Remove needles and earth from them. Berries intended for processing must be ripe, without traces of pests and rot. It is better to take wild raspberries and strawberries, since these berries differ from garden varieties in a stronger aroma and less water content. Washing raw materials before drying is generally not recommended.

Step 2

Cut the mushrooms into plates no more than one and a half centimeters thick. The authors of a number of old manuals advise cutting off the legs at the cap itself and cutting them into plates, and drying the caps whole. Uncut young boletuses no higher than five centimeters can be recycled. Remove the seeds from the cherries, dry the other berries whole.

If the weather is sunny, string the mushrooms on a harsh string and hang in a well-lit place. Sprinkle the berries in a thin layer on a baking sheet or plywood sheet, lining it with clean paper. Place the berries in the sun, covering them with gauze to keep out insects. The same fabric can be used to protect drying mushrooms.

Stir the berries every four hours. The drying process will be accelerated by placing a stack of newspapers under the paper, which will absorb moisture. Change this layer every time you stir. Take mushrooms and berries to the house at night to keep them from dew.

Step 5

Drying time outdoors depends on the weather. Ready-made mushrooms should break easily, bend slightly, but not crumble. Properly dried berries should not stick together when squeezed.

Step 6

If the weather is not suitable for drying in the sun, you can get out of the situation with the help of the oven. Sprinkle the chopped mushrooms on a wooden wire rack and place on a baking sheet. To dry berries, use heavy paper instead of a wire rack.

Step 7

Preheat the oven to fifty degrees and place the mushrooms in it, leaving the door ajar. After three hours, remove the baking sheet and allow the mushrooms to cool. Stir the berries in the oven at this temperature every two hours.

Step 8

Dry the cooled mushrooms at seventy degrees. The oven door must remain open at the same time.

Step 9

Arrange dried berries and mushrooms in cloth bags and keep them in a cool dry place. You can store your workpieces in tightly closed glass jars by placing them in a dry cabinet.
