  • -1 turkey carcass
  • -1 lemon
  • -75 g ghee
  • -50 g smoked lard or bacon
  • -2 heads of onions
  • - 100 g each of almonds and raisins
  • -8 apples
  • -2 eggs
  • -100 g wheat bread
  • -80 ml of milk
  • - spices (cumin, sage, paprika, salt, pepper)

Instructions

Step 1

First of all, prepare the turkey carcass for baking. To do this, wash the meat well in warm water, dry it, rub with salt and pepper on all sides. Cut the smoked bacon into small pieces and melt it in a frying pan. Cut the bird's liver into small pieces.

Step 2

Chop the onion finely and fry all together in melted bacon. Dry the bread, cut it into medium-sized cubes and combine with the fried liver. Chop the almond kernels and cut the apples into wedges, and together with the caraway seeds, raisins and lemon slices, add to the liver and bread.

Step 3

Fill the turkey loosely with the prepared liver filling, sprinkle it with lemon juice and paprika diluted in melted fat. Wrap the turkey in foil and bake in the oven for 3 hours.

Step 4

50 minutes before cooking, unfold the foil and coat the poultry with the fat that is released to obtain a golden crust.
