The homeland is prepared according to different recipes, so it often differs in aroma and taste. However, there are two main types of this drink - industrial rum and agricultural rum. The preparation of both types of rum is slightly different from each other, and it can also be prepared at home.

Cooking in production

The preparation of both industrial and agricultural rums starts the same way - the bottom of the sugar cane stalks is cut and ground. Then the crushed stems are squeezed out to obtain juice, which is cleaned and filtered. The basis for the preparation of industrial rum is molasses left over after sugar production and obtained as a result of boiling cane juice. This juice is heated to the consistency of a syrup and the formation of sugar crystals, which are then separated by centrifuges from the molasses and refined. The remaining molasses is placed in a tank along with water, sourdough and yeast, fermented and then distilled. The finished rum is blended for a special bouquet with cinnamon, vanilla, fruit flavors and so on.

Agricultural rum production occurs only in Haiti and in the French departments by fermenting sugarcane juice and yeast. The resulting mash is distilled, after which rum alcohol is obtained, the strength of which is from 55 to 80% of the revolutions. This alcohol is diluted with distilled water and poured into oak barrels, giving the rum a beautiful amber hue. In order for the rum to remain colorless, it is placed in metal vats. The production of agricultural rum is not as large as the production of industrial rum - the volume of the latter covers more than 90% of world brands.

To make rum at home, you need to take 1 liter of good vodka, 200 g of sugar, 500 ml of pure water, 50 ml of rum essence, 10 ml of pineapple and vanilla essences, as well as 4 teaspoons of burnt sugar. The water is poured into a saucepan, mixed with regular sugar and heated over medium heat with constant stirring. When the sugar is completely dissolved, remove the pan from the stove and dissolve the burnt sugar in the resulting syrup. Scented essences can now be purchased in supermarkets or specialized online stores.

Mix vodka with essences in a separate bowl and pour this mixture into sugar syrup cooled to room temperature, stirring everything thoroughly. Ready rum must be poured into thick glass bottles, hermetically sealed and placed in a dark, dry place for a month to infuse. A month later, the rum needs to be filtered by filtering it through several gauze layers, after which the drink can be consumed both in pure form and as part of popular cocktails - for example, rum with cola and Mojito.
