It is necessary

  • For 1 liter of brine:
  • - 700-800 g gherkins;
  • - dill umbrella;
  • - 2 black currant leaves;
  • - a third of the horseradish leaf;
  • - 2 cherry leaves;
  • - 3 cloves of garlic;
  • - a teaspoon of mustard seeds;
  • - 5 black peppercorns;
  • - 2 tbsp. salt;
  • - 3 tbsp. Sahara;
  • - 100 ml of 9% vinegar.

Instructions

Step 1

For pickling, pick even small cucumbers, no longer than 5-6 cm. Wash them and fill them with cold water for 2-3 hours. This is necessary so that after sterilization, the cucumbers do not wrinkle and remain crispy.

Step 2

Prepare the jars during this time. It is better to pickle cucumbers in one-liter jars, in half-liter and 700-gram cans under tin lids, which are rolled up with a machine, or under twisting ones. The latter are preferable as they simplify the process. Wash the jars, sterilize over steam or pour boiling water over for 10-15 minutes. The covers must be free of rust or other damage. Wash them and boil for 15 minutes. Place clean, sterilized jars and lids on an ironed napkin or towel and deal with cucumbers.

Step 3

At the bottom of the jars, put garlic, chopped into 2 parts, chopped horseradish leaf, whole cherry and currant leaves, dill. Take cucumbers out of the water, rinse them under the tap and place them tightly in jars.

Step 4

Put two pots on the fire. One with clean water, in the second, make a brine. Add 100 ml of vinegar, 2 tablespoons of salt and 3 tablespoons of sugar to 1 liter of water. Bring to a boil.

Step 5

Pour boiling water over the jars and cover, do not roll up. After 10 minutes, drain the water and pour boiling water over again. For the third time, fill with brine, after sprinkling mustard seeds and putting peppercorns. Roll up, turn upside down and wrap with something warm. After a few hours, the cucumbers can be taken out and stored.

Step 6

You can not roll cucumbers right away, but sterilize in water. To do this, you do not need to pour boiling water over them, but immediately pour the cooled brine. Place the jars in a large pot of water, which should cover them up to their shoulders. Cover with lids, do not roll up. Turn on the fire. When the water boils, time it. For liter cans, sterilization is required for 40 minutes, for half-liter cans - 20 minutes. Then roll up, turn upside down and leave to cool. No need to wrap up, otherwise the cucumbers will become soft.
