Currants have long been considered the berry of health. It is an ideal immunomodulatory agent. Folk recipes are full of various ways of using currants to treat many ailments. In order for this wonderful berry to be present in the diet all year round, it can be prepared for future use. Many useful winter preparations are made from it. For example, compote. For its preparation, any varieties of berries are suitable - red, white, black currant. They must be fresh, ripe, undamaged.

It is necessary

    • For black currant compote:
    • 600 g of black currant;
    • 2.5 liters of water;
    • 3 kg of sugar.
    • For red currant compote:
    • 1 kg of red currants on twigs;
    • 250 g sugar;
    • 500 ml of water.

Instructions

Step 1

Rinse the currant berries in cold water. They must always be freshly harvested and evenly colored. Go through them, separating them from the brushes. Sick, unripe and crushed berries must be discarded.

Step 2

Transfer the washed currants to a colander to drain the water. Then distribute it to the banks. For one half-liter jar, it is enough to put about 200 grams of berries. For a better compaction of currants when filling, shake the jars several times. They should be thoroughly rinsed and sterilized beforehand. For this, washed cans must be doused with boiling water and placed downside down on a boiling kettle. The sterilization time is about 15 minutes.

Step 3

Dissolve sugar in hot water and boil. Pour the currants in the jars with the resulting hot sugar syrup.

Step 4

Paste the cans of compote in hot water for about 20 minutes. Roll up the lids and store in a cool place. When consumed, this compote must be diluted to taste with boiled water, since it turns out to be very cloying.

Step 5

Try red currant compote. Its sweet and sour taste is very good at quenching your thirst. To prepare it, rinse the berries well on the twigs.

Step 6

Boil sugar and water. Place the currants directly on the branches in sterile jars, and pour boiling syrup. Cover the jars with sterile lids and put on fire to sterilize for half an hour. After that, the cans with compote must be immediately rolled up, turned upside down and wrapped in a blanket overnight. After that, the compote must be stored in the basement or closet. Since the compote turns out to be very concentrated, then before serving it must also be diluted with boiled chilled water.
