Currants are a storehouse of vitamins. It is very useful fresh, but you can also prepare it for future use in the form of jam and compotes. To preserve as much vitamins as possible, the berries need to be cooked less. To prepare currant compote, you can take different varieties of berries: black, red, white currants.

Step 1
Currants for compote must be freshly picked, ripe, undamaged. First of all, the currants need to be sorted out and separated from the stalk, rinse the berries well 2-3 times, placing them in a colander and letting the water drain.

Then you need to prepare the sugar syrup. Add sugar to boiling water, mix thoroughly, when it is completely dissolved, remove the pan from heat.

Then cool the syrup slightly. Dip the currant berries into it for one or two minutes, so that the currants do not wrinkle in the compote in the future.
Step 4
Put currants in pre-prepared jars and pour hot sugar syrup. Cover the jars with lids previously scalded with boiling water. Jars with compote should be placed in hot water at 90-95 degrees and sterilized. A 1 liter jar must be sterilized within 15 minutes, and a 3 liter jar - 25 minutes.
Step 5
Immediately roll up sterilized jars with lids, turn over and leave to cool.
