Step 1
You can freeze both raw mushrooms and already cooked ones. Before freezing the mushrooms, they must be thoroughly rinsed to prevent the presence of sand and earth particles in them, and then cut off the lower part of the stem. After that, the mushrooms are dried with a towel or paper napkins. This is done quickly enough, since an increase in the interval between washing and cooking mushrooms leads to their darkening.

Any varieties of mushrooms can be used for freezing, the only requirement is for their integrity. If the mushroom is wormy, then it is harmful to store it for a long time. Small mushrooms can be frozen whole, but in this case they take up more space in the freezer than shredded ones. Large mushrooms are cut into pieces, laid out in one layer on a cutting board, which is placed in the freezer.

After the mushrooms are frozen, they can be poured into any convenient container, from a plastic container to a plastic bag. This method allows you to avoid sticking their pieces to each other during freezing. Such mushrooms are stored in the freezer for a year. You can use them to prepare the same dishes that use fresh mushrooms. Thawed mushrooms are cooked immediately and cannot be re-frozen, as microbes multiply too quickly in them.
