Step 1

Take 2 sieves. One should be with cells of such a size that the eggs can freely pass through them. The second is with smaller holes. The methods of processing the eggs of all salmonids are approximately the same. Place a sieve with larger meshes in the bottom of a bowl or bowl. Take plastic or enamel dishes. It is undesirable to use aluminum bowls. A fork is preferred from stainless steel.

Pour a layer of caviar with clean cold water. The sieve should not be completely submerged. Gently, trying not to crush the eggs, mix the contents of the sieve several times. Large debris, blood clots and some of the films will separate by themselves. Remove them with a fork. If the cells are large enough, caviar will fall through them into the bowl, and everything unnecessary will remain on the net.

Take a finer sieve. Use it to strain the caviar into another bowl. Drain and replace with clean water. Rinse the caviar directly in the bowl, removing films and debris in the same way with a fork. Carry out the procedure until the wash water becomes completely transparent, and there are no debris, films and clots among the eggs. Remove dead eggs as well. You will notice them immediately, they are white or brown. After you make sure that there is no debris or films anymore, and the water drains completely clean, put the caviar in a salting dish.
