It is not difficult to buy freshly frozen fish in specialized departments of supermarkets or on the market. Sometimes a bonus to a whole fish carcass is first-class caviar, which can be found when cutting. It is easy to pickle caviar and prepare a delicious delicacy on your own. What tricks do you need to know to choose a fish with caviar? This will be discussed in my article.

First you need to distinguish the female from the male, and then proceed to the search for the female with caviar.
The female pink salmon, as a rule, is smaller, although this is not the main distinguishing feature, there are also large individuals.
Pink salmon female - specimens are discreet in appearance and have a nondescript color: the gray color on the body smoothly changes shades from light to dark. In the frozen form, the scales of females are uniformly colored in a grayish-silver color, without bright contrasting streaks.
The female's head is small, rounded with a rounded "feminine" nose.
Step 3
The male pink salmon has a distinct large hump on the back - hence the name of the fish. The body color is brighter and more catchy. Frozen individuals have darker colored areas of the body, which can be seen if there is no ice on the carcass. The large mouth-maw in males has an elongated and more curved shape with clearly visible teeth. In general, the male looks like a predatory fish.

To understand if there is caviar in the fish, it is enough to turn the ungutted fish upside down and examine it: if there is a noticeably enlarged anus, around which there is a red or pink halo, then pink salmon with caviar. Sometimes even eggs are visible in the hole. If the carcass is slightly thawed, the caviar can be felt as a small seal in the abdomen.
