You don't have to spend a lot of time to prepare a delicious dessert for tea. Try making delicate, no-bake curd cakes, wholesome dried fruit and nut candies, or whip up oatmeal cookies.
Curd cakes a la "Rafaello"
Ingredients:
- 200 g of grained cottage cheese, not less than 5% fat;
- 100 g of coconut flakes;
- 50 g sour cream;
- 70 g of honey;
- 4-5 pitted dates;
- 4-5 g of large hazelnut kernels.
Stir the cottage cheese with honey and sour cream well until smooth. If it is coarse, first rub it through a fine mesh sieve or grind it in a blender. Soak your hands in warm water, take a tablespoon of sweet curd paste and flatten it in your palms. Place a date or hazelnut in the center of the cake and gently mold a ball. Dip the cakes in the coconut and refrigerate for 15-20 minutes to set.
Quick Dried Fruit Sweets
Ingredients:
- 100 g of dried apricots;
- 100 g of prunes;
- 100 g of raisins;
- 100 g pitted dates;
- 100 g of hazelnuts or walnuts;
- 40 g of dried cherries or strawberries;
- 40 g of roasted almonds;
- 50 g of coconut flakes;
- 50 g sesame seeds.
Rinse all dried fruits under running water, put in a colander and pour over with boiling water. Pass them twice through a meat grinder or food processor along with hazelnuts or walnuts. With wet hands, form cakes from the resulting mass, place almonds or dried berries on each, wrap and roll, giving a round or cylindrical shape. Dip each candy in coconut or sesame sprinkles and wrap in paper or plastic wrap. Soak the sweets for 10 minutes in the refrigerator to harden a little.
Whipped up delicious oatmeal cookies
Ingredients:
- 250 g of medium or large oatmeal;
- 180 g butter 72.5% fat;
- 2 chicken eggs;
- 4 tablespoons Sahara;
- 2 tbsp. flour;
- a pinch of baking powder;
- 1 tsp cinnamon;
- 1/2 tsp vanillin;
- vegetable oil.
Turn on the oven, setting the temperature to 180oC. Use a whisk or mixer to crush the eggs and sugar. Add softened butter there and mix everything thoroughly. Then add the oatmeal, baking powder, vanillin and cinnamon to the resulting egg and butter mixture, and stir again to distribute the ingredients evenly.
Cover a baking sheet with a sheet of parchment, coat it with vegetable oil. Spoon the oatmeal dough out into ovals at some distance from each other. Top with a nut or raisin if desired. Bake the cookies until golden brown, about 10 minutes. Cool it, separate from the paper and serve with tea.
