Ice cream is one of the most favorite desserts for adults and children. Making homemade ice cream is easy. Using different ingredients, you can create ice cream for different tastes: chocolate, ice cream, fruit and berry and other varieties.
Basic conditions for making ice cream
- An ice cream maker is used to make ice cream at home, but if it is absent, a freezer in the refrigerator is used.
- To make the ice cream freeze evenly and without lumps, stir it every hour until it completely freezes.
- The ingredients are selected of high quality, fresh and natural. Milk and cream are chosen with high fat content, eggs - homemade, berries - fresh or frozen.
- Additional components (nuts, chocolate, flavors) are added to ice cream after cooling the bulk.
- Store the prepared dessert in a container with a tight lid so that the ice cream does not absorb odors and lose its taste.
- If desired, alcohol is added to the ice cream, which is introduced before freezing.
Creamy ice cream recipe
Ingredients:
- powdered milk 35 g;
- corn starch 10 g;
- vanilla sugar 1 tsp;
- granulated sugar 90 g;
- cream with a fat content of at least 35% 250 ml;
- fresh milk 300 ml.
Cooking method:
- Pour two types of sugar and powdered milk into a saucepan and mix. Gradually pour in 250 ml of milk, stirring constantly and avoiding the formation of lumps.
- Add cornstarch to the remaining 50 ml of milk.
- Put the saucepan with milk on the fire, bring to a boil and add the diluted starch. Stir well and cook over low heat until the mixture thickens.
- Remove the mixture from heat and let cool.
- Beat the cooled cream thoroughly with a mixer and gently add to the milk.
- The resulting mass is well kneaded and placed in the freezer. Remember to stir every 30 minutes until the ice cream is completely set.
Chocolate ice cream recipe
Ingredients:
- milk 1, 3 glasses;
- water 3 tbsp. l;
- egg yolks 3 pcs.;
- bitter chocolate 120 g;
- icing sugar 3 tbsp. l;
- 35% cream 6 tbsp
Cooking method:
- Grind egg yolks with powdered sugar until white.
- Bring the milk to a boil and gradually combine with the yolks, stirring continuously with a wooden spoon.
- Strain the mixture, put on low heat and cook until thickened.
- Whip the cooled cream.
- The chocolate is melted in a water bath.
- First add chocolate, then whipped cream to the mixture of milk and yolks.
- Mix the mixture thoroughly and place in the freezer.
Fruit ice recipe
Ingredients:
- granulated sugar 200 g;
- water 400 ml;
- watermelon 250 g;
- orange 4 pcs.;
- lemon 3 pcs.
Cooking method:
- Add sugar to hot water and heat over low heat until completely dissolved.
- Remove from heat and let the syrup cool.
- Lemons and oranges are squeezed separately from each other. Mash the watermelon with a blender, remembering to remove the seeds.
- Sugar syrup is added to orange juice 100 ml, to lemon juice 200 ml, to watermelon 100 ml.
- The resulting mixture of juice and syrup is poured into molds and placed in the freezer. After 20-30 minutes, sticks can be inserted if desired.
- To get the ice cream out of the molds, you need to put them in hot water for 2-3 seconds.
