Ensaimadas - puff pastry with butter

This interesting and tasty dish resembling a "snail" came to us from the island of Mallorca and belongs to the Spanish cuisine. The pastries are made from dough, greased with butter, which gives the dish a very delicate creamy taste. It is worth remembering that this is a high-calorie dish.

For cooking, you will need the following products:

  • 500 g of wheat flour;
  • 160 g of sugar;
  • 180 ml. warm milk;
  • 2 tsp dry yeast;
  • 2 eggs at room temperature + 1 egg yolk;
  • 200 g of softened butter;
  • a pinch of salt.
  • 70 g icing sugar and vanillin on the tip of a sprinkler knife.

Cooking recipe step by step:

Step 1. Take out the eggs and butter in advance so that they are at room temperature.

Step 2. Dissolve dry yeast in warm milk.

Step 3. Pour the flour into a large bowl, make a depression in the middle. Add sugar and pour in the yeast milk. Stir, cover with cling film and let sit for 5 minutes. The yeast should "work".

Step 4. After five minutes, beat in the eggs, egg yolk, salt and knead the dough with your hands or in the kitchen machine until elastic (4-5 minutes). If the dough is too sticky, add just a little flour. Cover the finished dough with a kitchen towel and leave to rest for 45-60 minutes. It should double in size.

Step 5. Turn the oven to preheat to 175 degrees. Line a baking sheet with parchment.

Step 6. Roll out the dough about 50x50 cm. Grease the surface with butter.

Step 7. Gently roll it up and fold it into a "snail" and place on a baking sheet. Cover again with a tea towel and let sit for 1 to 2 hours.

Step 8. Bake in the oven for 20-25 minutes until golden brown. Let the finished dish cool, sprinkle with sifted icing sugar.

Pastries can be stored at room temperature for 1-2 days.

You can also substitute custard for butter.
