Today pizza is so popular in Russian cuisine that it is served both as an everyday dish and as a holiday one. The taste of a filled tortilla largely depends on the quality and composition of the dough. The yeast base remains the classic option. An experienced chef uses various culinary tricks and secrets of yeast-based pizza making, so he can make a familiar dish truly unique.
Features of yeast pizza
According to the classical canons, pizza dough is kneaded with natural yeast, flour, salt and water. The dough kneads well, but here it is also important not to overdo it so that it does not become too hard. Before cooking, the workpiece is divided into parts and put to rest for 2-8 hours. Yeast dough is usually stretched by hand, and you can roll it out with a rolling pin.
For quick preparation of homemade pizza, frozen yeast puff pastry is often bought. It is necessary to work with it correctly:
- remove the pizza from the freezer 45 minutes before the start of cooking;
- do not spread too liquid filling on a cake made of puff yeast dough;
- pierce the edges of the tortilla with a fork before baking, otherwise the dough may be severely stratified.
Pizza toppings options
A wide variety of products can be used as toppings for yeast pizza, although tomatoes and cheese remain the traditional ingredients. There are more and more recipes for sweet fruit and berry pizza pies. To prepare the filling for the yeast-based tortilla base, you can use, in particular:

- sausage;
- seafood;
- fish;
- mushrooms;
- vegetables;
- fruits;
- berries;
- greens;

Before placing the filling on the cake, the dough is generously greased, usually with ketchup, mayonnaise, in sweet pizza pies - with olive oil. To prevent the products from moving during baking, the edges of the workpiece are left free by 0.5-1 cm and slightly bent inward.

Grease a baking dish or baking sheet with vegetable oil, stretch the dough by hand to the desired size. Make sides around the perimeter of the cake, grease the top of the workpiece with a mixture of ketchup and mayonnaise (a couple of tablespoons each). Arrange vegetables and sprinkle with grated cheese. Bake at the maximum oven temperature for 10 minutes.
Yeast dough pizza with mushrooms and chicken
Dissolve 10 grams of active dry yeast in milk heated to 35 ° C. Add a tablespoon of granulated sugar and wheat flour. Stir and place in a warm place for 15 minutes. When the dough rises, sift a pound of flour onto a board.
- Make a depression in the center of the flour slide. It needs:
- beat out a couple of eggs;
- pour out the dough;
- add 2 tablespoons of olive oil;
- pour in 300 ml of milk warmed up to 35 ° C;

Spread a glass of ketchup over the top of the cake in an even layer, without touching the sides. Lay out the components of the filling in layers:
- meat and mushrooms;
- tomatoes and sausage;
- some olives;
- slices of cheese.
Coat the top of the pizza with two glasses of mayonnaise and bake in the oven. Keep such baked goods in the oven for 1 hour at a temperature of 180 ° C.
Pizza made from frozen yeast puff pastry
Defrost 400 grams of puff yeast dough in advance and cut into several pieces of the same size. Grease a baking sheet with vegetable oil, then lay out the pieces of puff pastry. After 1 cm from the edges, draw frames around the perimeter of each pizza with the blunt side of the knife, but do not make cuts.
Grease the workpieces with tomato sauce. You will need about 2 tablespoons per 400 grams of puff pastry. Peel 50 grams of semi-smoked sausages and sausages and cut into thin rings.
Wash and dry the vegetables. Cut 3 tomatoes into rings, remove the core and seeds from the bell pepper and chop the vegetable into strips. Put sausage and sausages on the pizza, then put several halves of pitted olives, peppers and tomatoes.

When bubbles appear on the surface of the batter and it begins to gain volume, add 2 eggs and 45 grams of softened butter. Mix everything well and add another 250 grams of flour. Knead a soft dough, then let it rest for half an hour.
Roll out the dough into a layer. Soften 200 grams of butter and grease the workpiece with it. Sprinkle with two tablespoons of vodka, apply a thin layer of flour powder and fold the dough in half, then four times in the form of a rectangle. Pinch the edges and re-roll the dough into a layer, fold it back into a rectangle and roll it out.
Repeat these manipulations a couple more times, then divide the layer into parts, put each in a plastic bag and place in the freezer for half an hour. Roll the cooled dough into a layer and pierce the edges with a fork. Arrange on a baking sheet greased with vegetable oil. Form the sides and cover the cake with a thin layer of ghee. Preheat the oven to the maximum temperature and place a baking sheet in it.
In a separate bowl, mix together 120 grams of curd cheese, a teaspoon of cinnamon. When the crust is slightly baked on the pizza, remove it from the oven, brush with the cheese-cinnamon mixture, then a third glass of blueberry jam. Sprinkle a glass of chopped mozzarella cheese in an even layer and garnish the pizza with fresh blueberries (glass). The total baking time for original, savory pastries is 15 minutes. The mozzarella should melt and the fruit should begin to ooze.
Green pizza with yeast dough
For an unusual yeast dough with herbs, combine a glass of warm milk and a couple of eggs in a bowl, beat with a mixer. Add 2.5 grams of baking powder and a couple tablespoons of extra virgin olive oil. Beat the mixture again until it acquires an even color.
Rinse a bunch of green onions, dry thoroughly and chop very finely. Add to eggs and milk, season with salt and pepper to taste, while using a mixture of peppers. Add 350 grams of sifted wheat flour in small portions with constant stirring and knead until no lumps remain.
Put the dough on the table, knead, adding flour if necessary. Roll out or stretch into a cake, make bumpers. Prepare the ingredients for the filling. Rinse, dry and chop the mixed greens to make a full glass. Can be used:
- onion feathers;
- parsley;
- dill;
- spinach;
- Chinese cabbage;
- basil.
Divide into inflorescences and put half a glass of broccoli in boiling water, blanch for 5 minutes, then remove and discard in a colander. Peel the avocado, remove the pit, cut half of the fruit into thin slices.
Wash and dry the bell pepper pod, 5 cherry tomatoes. Cut the tomatoes into halves, peel the peppers and cut into strips. Peel and chop half of the onion into thin half rings.
Grease the pizza with three tablespoons of extra virgin olive oil, place all the prepared filling components on top. Leave the greens on the last layer. To fill, mix:

- 0.5 teaspoon table salt;
- a glass of sunflower seeds without husks;
- 6 crushed garlic cloves
- freshly squeezed juice of one lemon;
- half a glass of olive oil;
- a couple of tablespoons of starch.
Pour pizza with the resulting mixture and bake in the oven for 20 minutes, heating it to 200 ° C.
Vegetarian Yeast Pizza
Dissolve a tablespoon of granulated sugar and a couple of teaspoons of dry yeast in a glass of warm water. Stir for a minute, then let stand in a warm place for another 5 minutes to activate the yeast.
In a separate bowl, mix 3 cups of sifted wheat flour with a teaspoon of sea salt, then add 25 ml of extra virgin olive oil and diluted yeast. Stir until the dough is completely homogeneous, knead it on a floured board for 10 minutes.
Roll the elastic dough into a ball and place in a dish coated with vegetable oil. Cover with a cotton towel and leave in a warm place for 2 hours. When the dough rises, knead it and stretch it by hand into a crust.
Wash 4 tomatoes, a bunch of basil and chop. Chop half a cup of pickled artichokes, cut 100 grams of tofu into cubes. Make sides on the cake, grease the dough with ketchup and evenly place on it:
- tomatoes;
- artichokes;
- half a glass of olives;
- cheese;
- greens.
If desired, add a little pepper and salt to the filling. Heat the oven at maximum temperature for half an hour, then bake pizza in it for 10-15 minutes.
Yeast pizza with corn and mayonnaise
Knead the dough with a teaspoon of fast-acting dry yeast, 150 grams of flour, 90 ml of warm water, a teaspoon of table salt and the same amount of granulated sugar, and two teaspoons of extra virgin olive oil. Knead a soft dough and let it rest warm for 15 minutes. After that, knead and leave to lie down for another 15 minutes.
Roll out the dough and place on a baking sheet greased with vegetable oil. Wrap the edges of the workpiece, brush with a mixture of 3 tablespoons of mayonnaise and the same amount of tomato sauce. Grate 150 grams of hard cheese and sprinkle with the first layer under the filling.
150 grams of pickled chopped champignons, 2 tablespoons of canned corn and the same amount of olives in a colander to drain the juice. Wash and cut tomatoes and olives into rings. Put the filling and bake in the oven preheated to 200 ° C. When the edges of the pizza are golden brown, the dish is ready. Serve with chopped dill.
Pizza "Caesar" on frozen yeast dough
Defrost 400 grams of frozen dough from the store in the refrigerator compartment in advance, then knead a little and roll into a ball. Cover with cling film and leave in a warm place for an hour. Meanwhile, boil 100 grams of chicken fillet in salted water, remove from the broth and cool.
Prepare the pizza sauce. Grate 10 grams of Parmesan on a medium grater, pass through a garlic press a half-clove of garlic. Grind the anchovies to make a tablespoon of sliced fish. Beat the egg yolk with a broom and stir in it;

Coat the piece with the remaining pizza sauce. Apply a layer of cheese mixed with chicken. Bake at the highest oven temperature until the edges of the dough are browned. To make the dish especially tasty and beautiful, you can serve portions of the classic Caesar salad on slices of ready-made pizza.
