A turkey stew is easier to cook than a roasted turkey counterpart. The result is a dish with dietary meat and vegetables that are saturated with turkey juice and flavor. Here are some of the foods in this recipe:

- 600 g fillet or 950 g from a carcass with bones;

- 2 heads of turnip onions;

- 1 carrot;

- spices, salt;

- vegetable oil.

Wash the turkey, blot with a paper towel, cut into large pieces. Sprinkle them with salt, spices, rub with your hand. Pour vegetable oil into the pan, let it warm up, put the pieces of the carcass, fry them on both sides until lightly gilded.

After that, remove the turkey from the pan, send the onions and carrots there. Peel, rinse these vegetables, cut the onion into cubes, pass the carrots through the large holes of the grater.

Now put the turkey to the lightly fried vegetables, mix, cover it all with water, which should not reach the top of the meat pieces by 1 cm. When the liquid boils, cover the pan with a lid, simmer the bird for 1-1.5 hours. Determine readiness as follows: pierce a piece of carcass with a fork, if it enters freely, then the dish is ready.

This turkey is served with mashed potatoes, rice, buckwheat. You can add large pieces of raw peeled potatoes to the meat 30 minutes before the end of braising. You will get a complete dish that can be served with sauerkraut, vegetable salad, pickles or pickled cucumbers. Chopped fresh herbs would be appropriate here, too.

For New Year, birthday, on a big family holiday, cook a baked turkey. She will surely make a splash among the invitees and will become the subject of discussion all the following days. Cooking consists of two stages, first you need to salt it so that the meat does not bake too long, and it is juicy. To prepare this turkey dish, you need to take:

- a turkey weighing 6 kg;

- 0.5 cups brown sugar;

- 200 g of salt;

- 1 tbsp. dried: thyme, rosemary, sage;

- 1 tbsp. black peppercorns;

- 4 liters of vegetable broth.

If you don't have ready-made vegetable stock, cook it. To do this, put 4 liters of water on the fire, when it boils, put an onion, cut into 4 pieces, coarsely chopped 3 celery stalks, 2 carrots, cut into halves. Add 1 tomato, 3 cloves of garlic, and cook the broth for 30 minutes.

If you don't have any of these vegetables, replace them with others.

Strain the broth, add spices, salt, sugar to it, cook for 10 minutes, then remove from heat, cool to 25 ° C. Place the turkey in a bowl, large saucepan or other container and pour in the cooked stock. The bird should be completely covered with it.

Keep it in this state for 12 hours, remove it from the brine. Rinse thoroughly inside and outside with cold water. Stuff its cavity with coarsely chopped slices of orange, apple, half an onion.

Put the carcass in a baking dish with the breast on top, tie the legs, slip the wings under the back.

Place the bird in an oven preheated to 230 ° C for half an hour, then reduce the heat to 175 ° C, cook for 120-130 minutes. An hour after the start of baking, water the carcass with the released juice every 15 minutes.

Such a turkey looks great, but supporters of diet food are better off including stewed poultry in their diet.
