I bring to your attention a recipe for homemade duck stewed in a brazier. According to this recipe, duck meat turns out to be soft, juicy and very tasty, and it is very simple to cook it.
It is necessary
- - duck - 2.5 kg;
- - onions - 2 medium onions;
- - carrots - 2 pieces of medium size;
- - salt, spices, herbs - to taste;
- - vegetable oil - 100 ml.
Instructions
Step 1
We wash the duck well, cut it into pieces, put it in a colander for 5 minutes (so that the water is glass), add spices to taste. I added black pepper, Provencal herbs, paprika;
Step 2
Preheat the pan, pour in the vegetable oil, put the pieces of duck in a preheated pan, cover with a lid halfway (so that the duck is fried, not boiled);
Step 3
While the meat is fried, cut the onion into half rings (put the chopped onion on a plate), three carrots on a coarse grater;

When the meat has been fried on both sides, we transfer it to the brazier, and the fat that has been fried from the meat is left in the pan, put the chopped onions, carrots, put on the fire, fry until golden brown;
Step 5
Add fried onions with carrots to the meat, pour water into the brazier (so that the meat is covered with water), add salt to taste, put on low heat, cover with a lid, but not completely: you must leave a small hole for the steam to escape;
Step 6
Simmer the duck in a brazier until tender. When the meat is tender, add finely chopped greens, turn off the gas and serve, and pour the side dish with gravy. Bon Appetit!
