Meat and rice are the main ingredients of kharcho, so they must be carefully selected. Many believe that Georgian cuisine includes only lamb, but this soup is best made with beef. Pick up a good piece of meat on the bone. Rice should be either round or long-grain.
Classic kharcho recipe
You will need:
- 400 g of fatty beef on the bone;
- half a cup of rice;
- 1 large onion;
- 2 cloves of garlic;
- 3 medium prunes;
- hot chili pod;
- a spoon of hops-suneli and tklapi;
- 60 g tomato puree;
- a spoonful of vegetable oil;
- 6 glasses of water;
- salt, pepper and herbs to taste.
Getting down to the process of making kharcho
The beef is cut into medium pieces and placed in a saucepan. Add a glass or two of water, the meat should be completely covered. Place the pot over high heat and simmer for 5 minutes.
Chop the onion, garlic and herbs, mix them with tomato paste, hops-suneli and butter. This mixture is cooked for 2 minutes over high heat.
Cook the rice and add it to the meat along with pepper, prunes and tkemali. Cook the soup for another 10 minutes.
At the very end, add chopped dill and parsley, add to the soup, turn off the heat. Cover the pot with a lid and let the soup stand for 5-10 minutes.
