Bird's milk is a soufflé-based dessert. This confection comes in either candy or cake form. The cooking recipe is not complicated, but it requires certain skills and some time. You can diversify the taste of bird milk if you add fruit and berry syrup, cocoa or zest and citrus juice to a tender soufflé.

- 2 cups sugar;
- 2 tablespoons flour;
- 40 grams of gelatin;
- 200 grams of butter;
- 1 bag of vanillin;
- 1 glass of milk.
Instructions
Step 1
Soak the gelatin. To do this, fill it with 1 glass of water.

Leave the gelatin to swell for 30-40 minutes.

Separate the whites from the yolks.

Place the proteins in the refrigerator.

Mash the yolks with half the sugar until white.

Heat the milk a little warmer than room temperature.

Sift flour and, gradually pouring milk into it, stir everything until smooth.

Mix milk with yolks and beat until smooth.

Place the mixture in a water bath and, while whisking, heat the mixture until thickened.
The consistency should be like a custard.

Remove the cream from heat and set to cool.

Place the swollen gelatin in a water bath and heat until completely dissolved. Do not boil.

Beat the cooled whites, gradually adding sugar until a stiff foam.

Continuing to whisk, inject gelatin into the whites in a thin stream.

Mash the butter until it is white.

Gradually adding the cooled mass with yolks, mash, and then beat with butter.

Combine the custard with protein and whisk everything together.
