  • - 0.5 cups of vinegar (6%);
  • - 8 black peppercorns.

Instructions

Step 1

Wash and peel the eggplants, then cut them into small mushroom-shaped sticks.

Put the chopped eggplants in a wide bowl, add salt and leave for 2 hours. During this time, bitterness will come out of the eggplant. Prepare the onion and garlic: peel, wash and pat dry. Cut the onion into half rings, divide the garlic into wedges and cut each wedge in half.

Pour 2-3 tablespoons into the pan. vegetable oil, heat it and lay out the eggplant pre-squeezed from the juice. You should not put all the vegetables in the pan at once, it is better to cook them in small batches, turning them over so that they are lightly fried on both sides.

Put the fried eggplants in an enamel pot in a layer of about 4 cm, on top of them place a layer of chopped garlic and onions. Spread the vegetables in layers until they run out.

Now you can start preparing the marinade. Pour 2 cups of water into a small saucepan, add pepper, bay leaf and vinegar. Boil the marinade and pour over the eggplant. Cover the pot with vegetables with a lid and put it in the refrigerator for 2 days, after that you can serve the mushroom-flavored eggplant to the table.
