  • -white dry wine 200 ml
  • -olive oil

Instructions

Step 1

We thoroughly rinse the fish under running water and clean it of bones, then put finely chopped parsley, pepper, salt, lemon zest and bay leaf in a saucepan. Pour water and bring to a boil. Next, cook for about 20 minutes over low heat, then put salmon in a saucepan and leave to cook for another 10 minutes.

Then we remove from heat, cover with a lid and put in a cool place to infuse the broth.

Step 3

After the broth has cooled, take out the fish, peel and cut into pieces. Do not pour out the broth.

Fry the onions in butter and vegetable oil, add the rice, stirring slowly in the oil and add 200 ml. white wine.

Step 5

Cook for 3-4 minutes so that the alcohol evaporates. After that, gradually add the broth in which the salmon was cooked, and stir slowly to soak all the rice.

Step 6

5 minutes before cooking, lay the salmon slices.

Step 7

When everything is ready, remove the dish from the heat and add the oil. Then cover and wait 3-5 minutes.
