Risotto is both a simple and sophisticated rice dish that comes from Italian cuisine. There are many variations of this dish, which sometimes include unexpected ingredients. A striking example is pumpkin risotto.

    • 1 medium pumpkin;
    • 3 tbsp. tablespoons of vegetable oil;
    • 1 onion;
    • 1-2 heads of garlic;
    • 300-400 g of Arborio or Carnaroli long-grain rice;
    • 200 ml of dry white wine;
    • 100 g of hard cheese;
    • 2 stalks of parsley or celery
    • salt;
    • black pepper.

Instructions

Step 1

Cut the pumpkin and remove the seeds and pulp into small cubes. Brush a baking sheet with a thin layer of vegetable oil and place the pumpkin cubes on top of it, season with salt and pepper. Place the baking sheet in an oven preheated to 200 degrees. As it cooks, which will take about 20 minutes, the pumpkin will turn golden brown. When the cubes are soft enough to the touch, they can be removed from the oven.

Pour a couple of tablespoons of vegetable oil into the pan and pour very finely chopped onions into it. Fry it for a few minutes, until it is completely transparent. You can also add some chopped garlic to the onion skillet.

Step 3

Place the rice in the skillet. Mix it thoroughly with the onion and garlic, then let the rice heat up for two to three minutes. Then pour the wine into the pan and wait until it starts to boil. After that, in small portions in several stages, add the broth to the pan, constantly stirring the dish. Add each new portion of broth only when the dish has absorbed all the liquid. After pouring all the broth, dodge the heat and cook the rice, stirring the dish without stopping. It will take about ten to fifteen minutes to cook the risotto.

Step 4

Check the rice for doneness. It should be soft, but have a slightly hard core. Place the pumpkin cubes in a skillet and stir the dish thoroughly. Then turn off the heat and let the dish stand for a while, no more than a minute.

Step 5

Add butter to the risotto and stir until smooth. Then sprinkle the pumpkin risotto with the grated hard cheese. You can decorate the finished dish with fresh herbs, season with allspice and add a suitable sauce.
