A real Ukrainian borscht cannot do without tomato paste. Also, without this sauce, it is simply impossible to cook the most popular Italian dish - pizza. Making tomato paste at home is easy.

- - tomatoes 3 kilograms
- - onion 2 pieces
- - sugar 100 grams
- - half a glass of table vinegar
- - salt
Instructions
Step 1
The main condition in the preparation of tomato paste is well-ripened tomatoes. Vegetables are well washed, spoiled places are removed. The stalk does not need to be cut out.
Step 2
Tomatoes are cut in half without strict symmetry. The onion is peeled and chopped.
Step 3
Chopped tomatoes and onions are placed in a large enamel pot. No more than half a glass of water is added to vegetables. The saucepan is covered with a lid and everything is brought to a boil.
Step 4
After boiling, you need to reduce the heat and extinguish the contents for 15 minutes. The tomatoes should be juiced and tender. Remove the pot from the stove and cool.
Step 5
It is necessary to wipe the cooled mass through a sieve to remove the stalks, seeds and skins of the tomatoes. The cake is thrown away, and the resulting mass is boiled over low heat until it decreases in volume by a factor of five, no less! The paste should be stirred periodically.
Step 6
When the pasta is almost cooked, you need to salt it and add sugar. After that, take a sample and correct the taste. Pour in vinegar and stir. If the paste is prepared as a preservation for the winter, then it should be immediately poured into pre-sterilized jars, closed with lids and rolled up.
