A pork knuckle can be a good base for a roll. It tastes like boiled pork, but it turns out to be much softer and juicier.
It is necessary
- - pork knuckle 1 pc.;
- - chicken fillet 300 g;
- - carrots 1 pc.;
- - onion 1 pc.;
- - a handful of onion husks;
- - garlic 2-3 teeth.;
- - pepper, paprika, bay leaf, salt.
Instructions
Step 1
Wash the shank, clean the skin. Then, with a sharp knife, cut the shank in half lengthwise and carefully remove the bone. Unfold the pulp, slightly beat off, salt and pepper on both sides and grate with chopped garlic.
Step 2
Cut the chicken fillet into thin slices, beat off and sprinkle generously with red paprika. Peel, wash, cut into long slices or grate the carrots.
Step 3
Put chicken fillet and carrots on the shank layer. Gently roll everything up and tie tightly with culinary thread. Pour 2-2.5 liters of water into a large saucepan, add the onion peel, bring to a boil and put the shank roll into the broth. Add a whole peeled onion, salt, pepper, bay leaf and cook over medium heat until tender, adding water if necessary.
Step 4
Remove the finished roll from the broth, allow to cool, remove the threads and refrigerate for 2 hours. Cut into thin slices and serve, garnish with herbs and vegetables.
