Rinse the pork knuckle in tap water and dry with a kitchen towel or paper towel. Peel the onions and garlic. Chop the onion in half rings, and chop the garlic into slices.

Step 2

Grind the zira and coriander with a mortar or walk over them with a rolling pin. Then, in a separate small cup, combine them together with black pepper and salt.

Step 3

Cut a few deep holes in the shank - the deeper they are, the richer the taste of the meat will turn out. After that, rub the shank with a mixture of pepper and spices.

Now place the shank in a large deep bowl and brush it with mustard and sunflower oil. Distribute the garlic plates in the cuts, and lay the onion half rings under the shank and on top of it.

Step 5

When all the preparatory work is over, cover the bowl with the workpiece with a lid and put it in the refrigerator for at least 3 hours, or you can leave it overnight.

Step 6

When the time is up, turn on the oven and set the temperature to 170 degrees. Remove the bowl with the blank from the refrigerator. Remove the onion - you will no longer need it, and place the shank in foil. After that, put the workpiece on a baking sheet and send it to the preheated oven for 2 hours. 30 minutes before the end of the term, unfold the top of the foil, opening the meat so that it is covered with a crispy crust.

Step 7

Transfer the finished shank to a large dish and pour over it with the resulting foil juice. Alternatively, cut it into slices and serve with any side dish. Fresh tomatoes and cucumbers are best suited as a salad, as well as red onions soaked in vinegar and sprinkled with black pepper.
