Instructions

Step 1

Examine the purchased pork knuckle. If there are hairs left on it, rub it with flour and burn it over the fire.

Step 2

Rinse the shank with plenty of running water. Scrape it with a knife if necessary to clean it better.

Step 3

Put the prepared shank in a saucepan and fill it with cold water so that the water is 5 cm higher than the shank.

Cover the pot with a lid and place over high heat. Bring the contents of the saucepan to a boil, remove the lid and reduce the heat.

Use a spoon to scoop all the foam off the broth. Continue cooking with the broth at a low boil.

Peel and place the carrots and onions in a saucepan (this should be done an hour after you start boiling the pork shank). Add a few black and allspice peas, bay leaf there. Season with salt to taste.
