  • • Pork shanks with a total weight of 1-1, 2 kg
  • • Table salt -1 tsp.
  • • Garlic - 4-5 cloves
  • • Bay leaf - 1 pc.,
  • • Black and allspice beans - 4-5 pcs.
  • Products for the marinade:
  • • Mustard - 1 tbsp. l
  • • Soy sauce - 1-2 tbsp.
  • • Honey - 1 tsp.
  • • Red ground pepper - 0.5 tsp. (taste)
  • • Vegetable oil - 1 tbsp. l.
  • • Dried dill - 1 tsp.
  • Kitchenware:
  • • Cooking pot
  • • Sleeve for baking
  • • bowl for marinade

Instructions

Step 1

First you need to cook the meat and peel the garlic. From the pork shank, you should scrape off with a knife everything that confuses the meat: dark places, dirt, growths (if any). The shank is washed under running water and put into a saucepan with salt and spices for boiling. The meat is allowed to boil over high heat, the temperature is lowered and then simmered for 55-60 minutes until half cooked.

Step 2

While the meat is boiling, the peeled garlic is cut into slices. In a separate bowl, mix all the ingredients for the marinade: mustard, honey, soy sauce, oil and pepper and let the mixture brew.

Step 3

The shank, boiled until half cooked, is laid out from the pan, cuts are made with a sharp knife and stuffed with slices of chopped garlic. After that, the pork is completely coated with marinade and left to stand in it for 30 - 40 minutes. During this time, you need to prepare a baking sheet and sleeve.

Step 4

The pickled shank is placed in a sleeve, tied on both sides and placed on a baking sheet. You need to cook in the oven for about 1 hour and 30 minutes at a temperature of 180-200 degrees until tender and a delicious baked crust. Spread the meat on a dish and serve hot or cold.
