According to the Eastern calendar, the upcoming 2019 will be the year of the Earth Pig, therefore, in order not to anger the totem animal, it is recommended to exclude pork dishes from the festive menu. And then what about the Olivier salad, because according to tradition, one of its components is pork and beef doctor's sausage? In this case, an alternative version of the well-known salad is quite suitable.

It is necessary

  • - 2 medium chicken breasts;
  • - 7 potatoes;
  • - 1 large carrot;
  • - 200-300 g of canned green peas;
  • - 2 pickled cucumbers;
  • - 5 boiled eggs;
  • - 1 fresh apple;
  • - a few feathers of green onions;
  • - mayonnaise;
  • - sour cream;
  • - vegetable oil for frying;
  • - salt to taste.

Instructions

Step 1

Rinse the chicken breasts well under running water, then dry thoroughly. Optionally, you can wrap the meat in a plastic bag and beat off a little with a wooden kitchen hammer to soften the fillets. Cut the breast into small pieces.

Step 2

Heat some unscented sunflower oil in a frying pan, add the chopped chicken and fry until cooked.

Step 3

Rinse the potatoes and carrots well, boil in boiling water until cooked. Place vegetables on a plate and let cool completely. Peel and chop into not too large cubes.

Step 4

Drain the canned peas. Cut the cucumbers into cubes about the same size as the carrots and potatoes. Peel the apple, chop its pulp in the same way as vegetables.

Step 5

Peel the eggs. To do this quickly, place all eggs in a plastic container with a lid, pour in half a glass of water, and shake thoroughly for a few seconds. As a result of this simple action, the shell will crack, and the water will allow it to easily move away. Cut the eggs.

Step 6

Place all the ingredients for the salad in a deep salad bowl or dish. In a separate bowl, combine mayonnaise and sour cream. Most often, when preparing sauce for Olivier, sour cream is added a little more than mayonnaise. Stir the prepared salad ingredients with the sauce, add salt to taste.

Step 7

Rinse green onions under running water, shake off drops and chop. Place the salad in the serving dish and sprinkle with green onions on top. Another interesting option for serving the main New Year's salad is as a filling for tartlets or profiteroles.
