On the tables of our ancestors, this dish was invariably present on the days of Easter and Christmas, and then on the New Year. Recipes for the preparation of a suckling pig with buckwheat porridge, rice, vegetables, mushrooms and even berries have come down to our time. Modern housewives, wishing to amaze guests with a generous and nourishing New Year's table, can take one of these recipes into service.
It is necessary
- - dairy pig weighing up to 3 kg;
- - 200 g of celery;
- - 200 ml of red tart wine;
- - 50 ml of soy sauce;
- - 50 ml of 9% vinegar;
- - 1 dessert spoon of mustard seeds;
- - 1 teaspoon of spices: ground pepper, paprika, coriander, ground chili, cinnamon;
- - a pinch of dry savory and nutmeg;
- - salt, butter and olive oil.
Instructions
Step 1
Prepare the marinade: toss the mustard and black pepper grains, paprika, chili, cinnamon, salt, savory and nutmeg into the mortar. Pour in a drop of olive oil and grind the mixture with a pestle until the consistency of a paste. Stir it in soy sauce and then combine with wine and vinegar. Let the marinade brew for 40-60 minutes.
Step 2
The roast pig should be purchased gutted. Wash the carcass under the tap, let it dry. Use a sharp knife to make several shallow cuts inside. Do not spoil the thin skin outside! Liberally grease the pig with this marinade - both inside and on top. Do not forget to grease the ears and the patch.
Step 3
Take a glass jar that would fit inside the pig, but would not hang there freely, but would hold the shape of a carcass. Wrap such a jar (bottle) with culinary foil and place it in the pig's belly for the entire baking time.
Step 4
Now prepare the form - a baking sheet with sides. Pour in a couple of tablespoons of vegetable oil, spread out the celery stalks. Lay the marinade-covered pig on top. The most delicate places - the tail, ears and patch - grease abundantly with butter. Send the milk carcass to the preheated roasting pan.
Step 5
Bake for 1 hour at 200 degrees. Then take out the baking sheet with the pig for a minute: wrap the fried ears, patch and tail with food foil, and pierce the carcass itself in two or three places with a skewer. Return and cook for about an hour more, until the blood-pink juice oozes from the punctures, but clear.
Step 6
As a side dish for such a luxurious treat, you can serve young potatoes, mushrooms fried with onions or stewed cabbage.
