Instructions

Step 1

Wash the piglet in cold water, then put it in boiling water for 1-2 minutes. Remove and scrape off the bristle with a knife. Be careful not to damage the skin. Rinse the outside and inside again and pat dry with a cloth.

Step 2

Mix equal proportions of honey, mustard, sour milk or kefir. Rub the piglet with this mixture. Rub the inside of the pig with a mixture of any aromatic herbs. You can use marjoram, oregano, thyme. Turn the piglet over and leave for 3 to 4 hours.

Step 3

While the piglet is soaking, prepare the filling. There is not much meat in the piglet itself, so take the filling very seriously. Wash the kidneys well and soak them in cold water with the addition of vinegar. It will take you an hour and a half. Then take kidneys, heart, liver and boil them in salted water. You need to cook the liver for an hour. After that, cut everything into small pieces.

Step 4

Rinse dried apricots and prunes, and then soak for half an hour in cold water. Remove the seeds from the olives. Let the water drain and cut into small pieces.

Step 5

Chop onion and carrots finely, mix with chopped liver, dried apricots, olives and prunes. You can add diced loin or ham to this mixture. Salt. Add dried and chopped sprigs of marjoram or thyme to the prepared mixture.

Step 6

Start the piglet and sew up the belly with thick threads. Crush a few cloves of garlic, mix with honey and vegetable oil. Spread this mixture over the piglet and place it belly down on the baking sheet. In order for the head to bake better, you can stick an unpeeled walnut into your teeth. Wrap the ears, patch and hooves in foil. Otherwise, they will char very quickly.

Step 7

Put the piglet in an oven preheated to 160 - 180 degrees. Bake at this temperature for about two to three hours. Water the piglet constantly with the juice that is released. Then remove the foil and increase the temperature to 200 degrees to brown the piglet.

Step 8

Remove the piglet from the oven, remove the threads, brush with butter. The suckling pig is ready. It is better to serve boiled potatoes for a side dish.
