Ingredients:

  • 2 kg whole salmon;

  • 10 g flour;
  • 200 g carrots;
  • 2 teaspoons of salt
  • 20 g of cow oil;
  • 2 medium onions;
  • 20 g sunflower oil (odorless);
  • dill greens;
  • 5 allspice peas;
  • 300 g potatoes;
  • 300 g cream (20-25% fat).

Preparation:

  1. First you need to prepare a rich fish broth. To do this, you will need to thoroughly rinse and gut the fish. Then cut off her head and tail, remove the skin and remove the skeleton. All these "ingredients" must be put into a deep saucepan and filled with water (always cold). Next, the saucepan is placed on a hot stove.
  2. After the water begins to boil, it is necessary to remove all the formed foam. Then, the previously peeled and washed onion head, as well as the carrots, should be lowered into the pan. You don't need to cut these vegetables. Season with pepper and salt. Reduce heat so that the water only boils slightly. The broth will be ready in 30 minutes. It will be necessary to strain it, and throw out the fish and vegetables.
  3. In order for the broth to be more transparent, it can be strained several times. The finished broth must be salted again.
  4. While the fish broth is being prepared, you need to prepare the frying. To do this, peel the onion and chop it finely. Then grind the pre-peeled carrots on a grater. Vegetables must be poured into a hot frying pan, into which sunflower oil must first be poured. Fry them until tender.
  5. Pour peeled, washed and finely chopped potatoes into the newly boiled broth.
  6. Melt the butter in a skillet and fry the flour in it, stirring constantly. This must be done carefully so that no lumps form.
  7. After the potatoes become soft, add fried flour and fried vegetables to the soup. After that, add fish meat cut into not very large pieces into a saucepan.
  8. Then dill, spices are added to the soup and cream is poured. After it starts to boil again, the saucepan can be removed from the stove.
  9. Let it brew for 15-20 minutes under a closed lid and can be poured into plates.
