Ukha with cream is one of the brightest dishes in Finnish cuisine. Traditionally, this soup is made exclusively from salmon. A minimum amount of greens is added to it.
It is necessary
- - 500 g salmon
- - ground black pepper
- - sea salt
- - black peppercorns
- - butter
- - 5 small potatoes
- - 1 head of onion
- - 200 ml cream (1 glass)
- - flour
- - a few sprigs of dill
Instructions
Step 1
Remove the bones from the fish, and cut the fillet into small pieces. Boil the tail and back of the salmon to make a broth that will need to be filtered.
Step 2
Add a few black peppercorns, chopped onions and potatoes to the fish broth. Cook the soup until tender.
Step 3
Once the potatoes are tender, add the salmon fillets to the contents of the pot. Cook the dish over low heat for 10-15 minutes.
Step 4
In a separate bowl, combine the cream and two tablespoons of flour. Stir the mass into a boiling ear. Add salt and black pepper as you like.
Step 5
Before serving, place a small piece of butter in each plate and garnish with a minimum of dill.
