A delicious cake made of cottage cheese and biscuits with the addition of berry, fruit, cream or juice jelly is called cheesecake. This delicacy turns out to be aromatic and tasty and goes well with a cup of tea or coffee. Let's make a no-bake cheesecake with mascarpone and cherries.
Recipe 1. Cheesecake with mascarpone cheese
Required Ingredients:
- shortbread cookies - 400 g;
- mascarpone - 500 g;
- sugar - 200 g;
- heavy cream - 250 ml;
- butter - 200 g;
- gelatin - 25 g.
Transfer the shortbread cookies to a deep bowl and crush them into small crumbs using a crush. Melt the butter over low heat and stir with the cookie crumbs. Put the resulting mass on a baking sheet, tamp well and place in the refrigerator.
Meanwhile, pour the gelatin with boiled water and leave for 40 minutes to swell. Now the gelatin can be put on fire and heated until it completely dissolves.
Combine heavy cream with sugar, then stir, add mascarpone, gelatin and whisk. Put the resulting mass on the cookies in an even layer and send to the refrigerator for a couple of hours.

Required Ingredients:
- shortbread cookies - 300 g;
- butter - 150 g;
- mascarpone - 400 g;
- sugar - 200 g;
- heavy cream - 200 ml;
- cherry juice - 50 ml;
- cherries - 300 g;
- gelatin - 15 g.
Cover the shape (preferably round) with a special cling film. Dissolve the gelatin in water and leave for 40 minutes, and then heat over low heat until completely dissolved, but do not bring to a boil.
Mix sugar with mascarpone, then add heavy cream, juice and gelatin. Whisk these ingredients with a whisk, put in a round shape, put the cherries on top and refrigerate for 2 hours.
Pound the cookies in a separate bowl, then combine with softened butter and pour into the mascarpone cheesecake pan. Cheesecake without baking with cherries should be refrigerated for 45 minutes.
