Dor blue cheese is a real delicacy. Its name speaks for itself and translates as "blue gold". It is a semi-hard type of cheese with a pronounced taste and aroma. Dor blue is an excellent snack and is often served in a cheese plate, but it can also be a component of various dishes: salads, sauces, pizzas, ravioli, rolls.
Dor blue cheese salads
To prepare an original salad with pear and dor blue cheese, you will need:
- 1 pear;
- 100 g of dor blue cheese;
- 1 bunch of green salad;
- 50 walnut kernels;
- 2 tbsp. l. grape seed oils;
- 1 tsp dijon mustard;
- 1 tsp balsamic vinegar;
- 1 tsp linden honey.
First of all, rinse the green salad thoroughly and pat dry. Then tear it into small pieces with your hands, cut the dor blue cheese into small cubes, and cut the washed pear into thin slices. Then make a salad dressing. To do this: Combine grape seed oil, Dijon mustard, balsamic vinegar and lime honey. Combine pear with green salad, mix well, put in a deep salad bowl with a slide and pour over the prepared sauce. Place the dor blue cheese cubes on top and sprinkle the salad with walnut kernels, chopped in a mortar.
To prepare a salad with shrimp, grapefruit and dor blue, you need to take:
- 10 king prawns;
- 1 grapefruit;
- 60 g of dor blue cheese;
- 1 bunch of green salad;
- 1 bunch of mint;
- 3 tbsp. l. olive oil;
- 1 tbsp. l. lemon juice;
- ginger root;
- salt.
Boil the king prawns and peel. Finely chop the ginger root (take the amount to your liking). Pour 1 tablespoon of olive oil into a frying pan, put peeled shrimp with chopped ginger root, fry everything until golden and cool. Peel the grapefruit and peel and white films and divide each wedge into several parts. Cut the dor blue cheese into small cubes. Wash and pat dry green salad and mint. Make a salad dressing. To do this: grind the mint in a blender, add salt, lemon juice and the remaining 2 tablespoons of olive oil. Mix everything well. Spread the lettuce leaves on a plate and drizzle with half the mint dressing. Place shrimp, grapefruit slices and cheese cubes on top. Drizzle with the remaining dressing.
Ravioli "4 cheese"
To prepare this dish you will need:
- 100 g of Taleggio cheese;
- 100 g of brie cheese;
- 100 g of dor blue cheese;
- 100 g of parmesan;
- 30 ml of chicken broth;
- 5 g green peppercorns;
- 120 g butter.
For the test:
- 200 g flour;
- 2 eggs;
- a pinch of saffron.
Stir well the Taleggio, Brie and Dor Blue cheeses. Then knead the flour and egg dough and add the saffron. Roll out the dough into a thin layer and use a mold to cut out small circles. Place some cheese filling in the center of each, then moisten the edges with water and pinch. Prepare the ravioli sauce. To do this: pour the chicken broth into a frying pan, add green pepper, put on a low heat and evaporate the liquid to half the volume. Then add the butter, cut into small cubes, and stir. Boil the ravioli in a saucepan with lightly salted water for 4-6 minutes and place in the hot sauce. Sprinkle with grated Parmesan cheese, heat for a minute and serve with the sauce to the table.
