Quiche is a traditional French pie that can be prepared using any toppings. Quiche with beets will turn out to be bright, healthy and very tasty. It will appeal to both adults and children, and its colorful appearance will cheer everyone up.

- For the test:
- - 250 g flour and a little for sprinkling;
- - 150 g butter;
- - 1 egg;
- - a pinch of salt.
- For filling:
- - 3 beets (about 225 g);
- - 100 g of walnuts;
- - 200 g cream cheese;
- - 25 g of fresh dill;
- - 2 tablespoons of balsamic vinegar;
- - 25 g bread crumbs.
- - 40 g of arugula leaves;
- - 8 eggs;
- - 400 ml heavy cream.
Instructions
Step 1
We wash the beets thoroughly and set to cook until tender. At this time, prepare the dough: cut the cooled butter into small cubes, mix in a bowl with flour and a pinch of salt. Add the egg and knead into a homogeneous shortbread dough. We form a ball from the dough, wrap it in cling film, put it in the refrigerator for 30 minutes.
Step 2
Preheat the oven to 180C, put the walnuts on a baking sheet and bake for 5-10 minutes. We clean the cooled beets, transfer them to the blender bowl. Chop the nuts with a knife, add to the beets with cream cheese, balsamic vinegar and dill. Beat the cream until smooth, adding a little breadcrumbs.
Step 3
Preheat the oven to 180C again. On a floured work surface, roll out the dough with a diameter of about 30 centimeters and a thickness of 3-4 millimeters. We distribute the dough in the quiche mold (the recipe uses a mold with a diameter of 25 centimeters). Put baking paper on top of the dough and fill the form with beans or any other beans, send it to the oven for 20-25 minutes. Remove the baking paper and beans from the mold.
Step 4
We spread the beetroot paste in the form, distribute it evenly. Add arugula leaves on top. In a bowl, beat the eggs and cream, salt to taste and pour the quiche with the resulting mixture.
Step 5
We bake the pie for 45-50 minutes, leave it in the turned off oven until it cools completely.
