Instructions

Step 1

Think about the size of the sushi rolls. They can be narrow, these are the so-called hosomaki or simple rolls. In this case, the filling is usually from one to three strips of fish or vegetables of a small thickness, so it is better to cut the nori in half along the longitudinal side so that you can wrap the roll only once with a small gap for securing.

Step 2

If you intend to make more complex futomaki or saimaki rolls (rolls inside out with a thick filling), then use normal size nori sheets.

Step 3

Place the mat on the table, place the nori sheet on it. Spread the rice on top of it in small portions, soaking your hands in a mixture of vinegar and water to prevent the rice from sticking.

Step 4

Spread the rice so that it covers the nori leaf in an even layer. Leave the strips on the sides and farthest edge about 1 cm wide intact. Place the filling in the center of the resulting rice field, perpendicular to you.

Step 5

Place your thumbs under the mat on the edge away from you and lift it slightly together. Use the rest of your fingers to hold the filling so that it does not slide to the side.

Step 6

Fold the mat forward, rolling the roll tightly, and make one turn. Then lift the mat and pull it forward slightly so that the unfinished roll is back on the near edge of the mat. Repeat these two steps as often as necessary. As a rule, narrow rolls require one or two turns, thick ones - three.

Step 7

Remove the mat and secure the edges. Apply a little water / vinegar mixture to soften the nori and make it more sticky. Cut the finished roll with a sharp knife into 6-8 pieces.

Step 8

Nori can be laid not only in the form of rolls, but also for forming temaki. This type of sushi has the shape of a triangle. Place half of the leaf on the left palm, spread the rice on it with the tips of the fingers of your right hand, leaving a little less than half of the leaf intact, put the filling.

Step 9

Fold the bottom of the rice nori diagonally upward to form a triangle. Wrap the remaining clean part of the sheet tightly around it and secure with water and vinegar.
