Almost everyone loves vegetable salads. They are distinguished by a wide variety of ingredients, fresh taste and a lot of healthy vitamins. Try the fried eggplant salad. In order to prepare it, of course, it takes a little longer than for a regular salad, but it is worth it. Its peculiarity is that the more time it costs, the tastier it becomes.
It is necessary
- - 1 medium eggplant;
- - 1 spoonful of salt;
- - 1 sweet pepper, red or yellow;
- - 2 medium-sized carrots;
- - 1 small onion;
- - 2-3 cloves of garlic;
- - 2 tablespoons of white vinegar;
- - 1 spoonful of black pepper;
- - 2-3 tablespoons of vegetable oil for frying;
- - 1/2 cup chopped dill or parsley.
Instructions
Step 1
Eggplant should be washed and cut into long thin strips. Put in a bowl, salt well, mix and set aside for now.
Step 2
Peel sweet peppers from the core, peel a small onion from the husk. Cut the peppers into strips, and the onion as you like best - you can cut it in half rings, or you can cut it into smaller ones. Transfer the vegetable mixture to a bowl with a lid.
Step 3
Grate carrots, add them to vegetables. Put crushed garlic cloves and white vinegar there. Mix everything well so that the vegetables are well saturated with vinegar.
Step 4
Not earlier than an hour later, squeeze the excess liquid from the eggplant with your hands. Heat a frying pan with vegetable oil and fry the eggplants in it until tender. It takes about seven minutes. Add the finished eggplants to the rest of the vegetables and mix. Season with salt, pepper and herbs.
Step 5
Cover the salad and refrigerate for two hours.
