The end of August - the beginning of September is the time when summer residents harvest potatoes, and local, and not imported, root crops appear on market stalls. Potato dishes often appear on our table, and fried potatoes will appeal to almost every family member.
Of course, the usual fried potatoes are great, but by adding eggplants and onions to your favorite dish, you can get a fundamentally new dish. Fried potatoes with eggplant taste very much like potatoes with mushrooms, but there are a number of advantages. It is now that eggplants are ripening, and they are not at all expensive in the markets.
For cooking you will need:
- eggplants - 1 - 2 pcs;
- onion - 1 piece large;
- potatoes.
The amount of ingredients varies according to taste.
First of all, peel the eggplants and cut into slices 1 - 1, 5 cm thick, put them in a bowl, sprinkle with coarse salt. Leave the eggplant for 15-20 minutes. this time is enough to remove excess bitterness from the vegetable. We clean the onion and potatoes.
After the allotted time, wash off the salt from the eggplants and cut them into cubes or strips.
Put the pan on a moderate heat, heat the sunflower oil in it and pour in the eggplants, cover with a lid and fry for 2-3 minutes, then turn over and fry on the other side.
Cut the onion into cubes or in a quarter of a ring, pour it into a pan with eggplants.
While the vegetables are fried, we cut the potatoes, I personally like cubes, like french fries, but you can also slices. Pour the potatoes into a frying pan and stir, reduce the heat and fry the potatoes until half cooked, stir 1-2 times. Salt the dish at the end of cooking, only with very small pinches, otherwise the potatoes can be oversalted, since not all salt is usually washed out of the eggplants.
Fry the potatoes until tender and serve.
Fried potatoes with eggplants - the dish is undoubtedly tasty, but, unfortunately, very high in calories, therefore, people with overweight and with diseases of the gastrointestinal tract are not recommended to get involved in such a dish.
