    • 400 g fresh mushrooms (or 500 g canned);
    • 1 kg of potatoes;
    • 2 large onion heads;
    • 1 tsp lemon juice;
    • a few sprigs of fresh herbs;
    • salt

If you are cooking with fresh forest mushrooms, boil them first. Rinse the mushrooms well and cook in salted water for 1-1.5 hours. Then they must be rinsed well with running water and allowed to drain. If you use fresh champignons, then you do not need to cook them, it is enough to rinse and dry well. Canned mushrooms are also not boiled before cooking.

Peel the onion, wash and cut into half rings. Fry it until soft.

If the mushrooms are large, cut them into smaller pieces. Add oil to a frying pan with onions, add mushrooms and salt. Stirring vigorously, fry until a slight brown crust appears and the water has completely evaporated. When frying mushrooms, turn the fire high. When done, place them on a separate plate and cover. Turn off the fire, and do not pour out the remaining oil after frying.

Peel, wash and cut the potatoes into thin rings or cubes. After cutting the potatoes, wash them thoroughly with running water.

Add oil to the pan where mushrooms and onions were fried, put on fire to heat up. As soon as the oil starts to simmer, place the sliced potatoes in the skillet. You do not need to cover with a lid. The fire must be large enough.

It is not recommended to stir the potatoes until the bottom crust forms. Once crusty, reduce heat to medium and stir thoroughly. It is necessary to stir every 3-5 minutes so that the potatoes do not burn. It is recommended to use a wooden spatula for mixing so as not to crush the chopped vegetable during cooking.

Step 7

When the potatoes are almost cooked, put the mushrooms and onions in it, after sprinkling them with 1 teaspoon of freshly squeezed lemon juice. Salt, add spices to taste. Mix well. And fry for another 5 minutes without changing the heat. For a better taste, add a season of black peppercorns and one bay leaf.
