  • - 765 g carp fillet;
  • - 35 g of garlic;
  • - salt pepper;
  • - 135 ml of olive oil;
  • - 165 ml lemon juice;
  • - 2 eggs;
  • - 175 g of onions;
  • - 215 g eggplant;
  • - 325 g of zucchini;
  • - 475 g of sweet bell pepper;
  • - 215 g of tomatoes;
  • - parsley, bay leaf.

Instructions

Step 1

Thaw carp fillets at room temperature. Peel the garlic, chop it thoroughly in a mixer with the addition of salt. Then, without stopping whipping, gradually add to it two egg yolks and olive oil, as well as lemon juice.

Step 2

Beat until the mixture is similar in consistency to mayonnaise. When finished, add a spoonful of hot water, salt and pepper.

Step 3

For the vegetable stew, wash the vegetables. Peel the onions and chop finely. Chop the garlic. Wash sweet peppers, remove seeds and core, cut and fry in vegetable oil.

Peel the eggplants, cut into thin slices and also fry. Cut the zucchini, remove the seeds, peel, cut into small pieces and fry in vegetable oil.

Pour vegetable oil into a frying pan, heat it, fry onion and garlic in it, and then add to them all previously fried vegetables, salt and pepper. At the end of cooking, add bay leaves and a bunch of parsley to the vegetables.

Add olive oil, cover the pan and continue cooking over low heat for about 25 minutes.

Dip the tomatoes in boiling water for one minute, then take them out and peel them, then chop them finely.

Step 8

Remove the parsley and bay leaf from the pan with vegetables, add the tomatoes to the vegetables and continue cooking for another five minutes.

Step 9

Salt and pepper the fish fillet, sprinkle with lemon juice and fry in a pan in vegetable oil on both sides until golden brown.
