Salted mackerel is a real delicacy. Cooked at home, it is in no way inferior to the "store" one, even surpasses it in taste, and there are several ways to salt mackerel.
Several recipes for salting mackerel will allow you to inexpensively and deliciously cook fish at home. First of all, the mackerel must be thawed, cleaned, the head, entrails removed, the fins and tail cut off.
Mackerel marinated with mustard
For 1 kg of mackerel you will need: 1 liter of water, 5 tbsp. tablespoons of salt, 3 tbsp. tablespoons of granulated sugar, 1 tbsp. a spoonful of dry mustard, 6 bay leaves, 2 pcs. cloves, 2 tbsp. tablespoons of vegetable oil.
Boil the marinade in a separate saucepan, mixing all the ingredients. After the marinade boils, keep it on low heat for 5-6 minutes, set aside and cool. Put fish in it, cover with a plate, put under oppression and marinate in a cool place for 3 days.
Marinated mackerel with tea and liquid smoke
For 3 pcs. mackerel will need: 1 liter of water, 4 tbsp. teaspoons of tea leaves, 4 tbsp. tablespoons of salt, 2 tbsp. tablespoons of granulated sugar, 4 tbsp. spoons of "liquid smoke".
We prepare the marinade as follows: pour tea leaves, granulated sugar, salt into the water. After that, the marinade must be boiled, filtered, cooled. Add "liquid smoke" to the cooled marinade. We put the whole fish in a two-liter jar with tails up, pour it with marinade, close the lid and put in a cold place for three days, shaking occasionally.
Salted mackerel
A pound (500 g) of mackerel will need: 3 tbsp. tablespoons of salt, 3 tbsp. tablespoons of granulated sugar, black pepper and lemon juice to taste.
Cut the already peeled fish into portions, season with salt, pepper, sprinkle with sugar, sprinkle with lemon juice, mix well in a bowl so that the salt, sugar and pepper are evenly distributed. Place the bowl in the cold, covering it with gauze or a napkin so that it "breathes". After two days, the fish is ready.
Mackerel in a fragrant marinade with coriander
For 3 kg of fish you will need: 1 liter of water, 3 tbsp. tablespoons of granulated sugar, 6 tbsp. tablespoons of salt, 3 pcs. bay leaf, 9-10 black peppercorns, 3-4 allspice peas, coriander - 0.5 tsp. spoons.
Put the cleaned fish into a saucepan with a "valetik". Prepare the marinade by combining all the recommended ingredients, bring to a boil, cool, pour the marinade over the mackerel, cover with a plate on top, put under pressure and leave in a cold place for 5 days.
